Hello everyone, in today's post, I'll be sharing a healthy vegan and gluten-free banana bread recipe that is really delicious and simple to make. What's great about this recipe is that you can improve it by adding or substituting any ingredients you'd prefer. I love making banana bread because it's the perfect comfort food, and since it's healthy, I feel less guilty for eating most of it. It's one of my favorite things to eat for breakfast next to a warm cup of tea.

INGREDIENTS:

  • 3-4 Ripe Bananas
  • 2 cups of Almond Flour
  • 1/3 Cup of Brown Sugar
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 Cup of Coconut oil ( or oil of choice)
  • Pinch of Salt
  • Hand Full of Chocolate Chips or Chopped Walnuts

INSTRUCTIONS:

  1. Preheat the oven to 350 degrees.
  2. In a bowl, mash the bananas using a fork, add the melted coconut oil, and stir well.
  3. In a separate bowl, add the flour, brown sugar, baking soda, and baking powder. Mix to combine.

  4. Then add the wet ingredients to the dry ingredients and mix well.

  5. Pour the batter into a greased loaf pan and bake for 40-45 minutes or until browned. *Check if it's done by inserting a fork. If it's not clean, bake for 5 more minutes.
  6. Allow the banana bread to cool for 10-15 minutes and serve when ready to eat.

  • 1 1/2 Cup Gluten-Free Oats
  • 1/3 Cup Maple Syrup
  • 1 Flax Egg
  • A Hand Full Of Dairy Free Chocolate Chips

INSTRUCTIONS:
  1. Preheat oven to 350 degrees.
  1. Place all of the ingredients in a bowl and mix well to combine.
  1. Use a cookie scoop or a spoon to scoop out the dough on a parchment-lined baking sheet.
  1. Bake for 10-12 minutes.
  1. Allow to cool for 5 minutes and enjoy!

Every year for summer, my parents love to make ceviche for family gatherings. Ceviche is one of my favorite dishes I couldn't wait to eat every year, but after becoming vegetarian 3 years ago, I never got the opportunity to eat it again. Until I went to a vegan restaurant in Mexico last year, and order it. I loved it so much, I couldn't wait to recreate it back home. When I shared this delicious dish with my family, I never actually told them it was vegan ceviche, and to my surprise, no one noticed the difference. In fact, they were all shocked to know that I used cauliflower instead of fish. If you want that "fishy" taste, adding seaweed to this recipe will do the trick. Just like that, ceviche became my staple dish for summer again. I love this version of ceviche way more than the original one. I hope you decide to give this recipe a try and love it as much as I do!
